Hearty Chicken Casserole

Ingredients
* 4 small Chicken Marylands
* cooking oil spray
* 2 carrots, chopped
* 3 sticks celery, chopped
* 200g mushrooms, halved
* 2 zucchini, chopped
* 2 tablespoons Leggos Tomato Paste
* 425g can SPC Baked Beans
* 410g can crushed tomatoes
* 3/4 cup Campbells Real Chicken Consomme
* 1 tablespoon mixed dried herbs
* mashed potato, to serve

Serves 4; Prep: 20 mins; Cook: 45 mins; Nutritional Value: High Protein

Method

Trim any excess fat from chicken. Spray a large heated flameproof casserole dish with cooking oil. Cook chicken, in batches, until browned all over. Remove from dish. Drain any excess fat from chicken and dish.

Add carrot, celery, mushrooms and zucchini to dish. Cook 2 minutes. Add tomato paste, baked beans, tomatoes, consommé and herbs. Bring to boil. Return chicken to dish.

Cook, covered, in a moderate oven (180C) for about 45 minutes or until chicken is cooked through and vegetables are tender.

Serve casserole with mashed potato.

A very nice & healthy recipe if you leave out the mashed potatoes.

I am going to cook this for dinner tonight without the mashed potatoes as trying to loose weight.

Perhaps a weekly plan of healthy, low fat, low calorie meals would be fantastic.

This sounds really good, it would be even better if you could get hold of the Chicken Consomme. It used to be in the supermarkets but I haven't seen it for years.

Great recipe and quite easy to make ... but please fix up the spelling of casserole (casseroll is what it says) on the link.

If your worried about the mash potatoes add some olive oil instead of butter and milk. No fat at all. Potatoes don't have fat anyway, however high in carbs. Depends on the diet your on too of course.
Can anyone suggest what to use instead of baked beans, don't like them myself.

Sorry, createforprofit, oil is fat. But skip the oil and use extra skim milk and you will have non-fat mashed potato which will mop up the juices from the casserole and taste almost as nice.
