Smoked salmon and avocado baguette

Ingredients
  • 1 x 40cm baguette
  • 1/3 cup olive paste
  • 2 handfuls (approx 20g) baby English spinach leaves
  • 1 avocado, sliced
  • 3/4 cup roasted tomatoes
  • 250g sliced smoked salmon
  • basil leaves, to garnish

Here's how
1. Slice the baguette lengthways down the centre. Hollow out the baguette using your fingers.

2. Fill Baguette: spread the olive paste over the bread, layer the spinach leaves, avocado, tomatoes, smoked salmon and garnish with basil leaves.

3. Cut the baguette in half, tie each end with a paper napkin and serve.
