Here's how
1. Heat 1 tablespoon of the oil in a large, heavy-based pan, add the chicken and cook over high heat for 4-5 minutes. Set aside.
2. Reduce the heat and add 1 tablespoon oil. Add the onion, bacon and garlic and cook for 5 minutes, until the bacon is browned. Add chopped tomatoes. Stir in basil, oregano and sugar. Cook over moderate heat for 4-5 minutes, until slightly reduced.
3. Return the chicken to the pan and simmer for 10 minutes, turning once. Add olives and sprinkle with the fresh basil.
