Braised chicken in lemon, garlic and rosemary

Ingredients
  • 1.5kg chicken
  • 2 tbsp olive oil
  • 30g butter
  • 4 cloves garlic, crushed
  • 1 tbsp fresh rosemary
  • 2 small red chillies, chopped
  • 1/2 cup white wine
  • Strips of peel from 1/2 a lemon
  • 1/4 cup lemon juice
  • 1/2 cup chicken stock

Here's how
1. Cut the chicken into serving-sized pieces.
2. Heat the oil and butter in a large frying pan. Add the chicken pieces in a single layer; cook over medium heat until browned. Turn the chicken occasionally to prevent sticking.
3. Add the garlic, rosemary, chilli and wine. Cover the pan, reduce heat to low and simmer for 40 minutes or until the chicken is tender.
4. Remove the chicken and keep warm. Scoop excess fat from the top of the pan juices. Add the lemon peel, juice and stock. Bring to the boil and cook for 3 minutes. Pour over the chicken pieces to serve.

i am looking for a chicken cassarole reciepe that i can cook in a slow cooker using a variety of vegetables. something that is quick and easy to prepare and that i can leave to cook. thanks
